  4. Prepare 1/2 of spanish/red onion, finely diced.
  5. Prepare 3 of cloves garlic, crushed.
  6. It’s 1 of juice of 2-3 lemons.
  7. Prepare 4 tbsp of olive oil, extra virgin.
  8. Prepare 1/3 cup of pistachio nuts, roughly chopped.
  9. You need 1/2 cup of craisins (dried cranberries).
  10. You need 1/4 of bunch mint, roughly chopped.

  1. Bring stock to boil, take off heat and add in cous cous. Allow to sit for 5 minutes to absorb all liquid, add in the butter and fluff up with a fork and set aside.
