  1. Prepare 120 g of pack noodles.
  2. You need 4 of medium eggs.
  3. You need 2 of ripe plantains.
  4. It’s 5 of small tomatoes.
  5. You need of Scotch bonnet chillies (to taste).
  6. Prepare 1 of small onion.
  7. It’s 2 tbsps of olive oil.
  8. It’s 1/4 tsp of turmeric powder.
  9. You need of Salt.
  10. It’s of Vegetable oil for frying the plantain.

  6. Coat a non-stick frying pan with cooking spray or vegetable oil. Spread your noodles around the base of the pan and pour the egg mixture over it. Lay the fried plantains gently over the egg mixture; place a lid over the pan and set over low heat. Cook for 10-15mins or until the egg is completely firmed up. Turn off the heat and allow to rest for 5 minutes before serving..
